Cornflake Baked Salmon

All too many years ago, my eldest daughter was working on a cookery badge for the girl scouts.  One of the recipes which she prepared was cornflake coated chicken.  This salmon recipe is an adaptation of that dish, and it has proved really yummy with the cereal keeping the fish moist, and the herbs and spices really complementing the fish.


  • Salmon 2 x 100 -150g fillets
  • Cornflakes 1 1/2 cups crushed
  • Salt 1/4 tsp
  • Black Pepper 1/4 tsp
  • Dried Parsley 1/8 tsp
  • Paprika 1/8 tsp
  • Garlic Powder 1/4 tsp
  • Egg 1
  • Oil 1 Tbs
  • Water 1 Tbs


Preheat oven to 400 degrees. Rinse fillets and pat dry. Rub with salt and pepper. Then in a bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, remaining salt, pepper, and herbs. Dip each fillet in the egg mixture, then coat with seasoned cornflakes, pressing flakes to help them stick. Place fish in a lightly greased oven pan and bake until golden brown and crisp, about 20 – 25 minutes. Sprinkle with salt and pepper before serving.
