This is a refreshing drink for breakfast, or as an afternoon cooler. It has fresh ginger, and mango, and rather than adding ice (which can dilute to flavours), it uses a frozen banana to cool and thicken the mix.
The smoothie has the sweetness of the banana and mango, which is followed by the clean after-bite and tang of the ginger.
- Banana 1
- Mango 1/4
- Ginger Root 1 1/2 to 2 inch piece
- Coconut Milk 300 – 330 ml
Four hours to a day in advance, peel the banana and place in a freezer bag. When preparing the drink remove banana from freezer and break into pieces into a blender. Chop the mango into pieces, and peel and finely slice the ginger. Add these to the blender and add the milk. Blend on medium until the mixture is evenly mixed and no frozen banana bits remain. Serve in a large glass.
