Pineapple Lime Refresher

Here is a sweet, yet clean tasting summer drink.  It blends pineapple and citrus with a hint of honey, and makes for a great treat after a day of gardening.

Ingredients:

  • Pineapple Juice 500 ml
  • Lime 1
  • Honey 2 tsp
  • Soda Water 150 ml (or as needed)
  • Ice 1 1/2 cup

Method:

Juice the lime and remove any seeds.  Place juice and any bits into blender and add the honey, ice, and pineapple juice.  Blitz until ice is totally broken up and pour 1/2 each into two glasses.  Top up with the soda water.

Cherry-Berry Crush

This cooling drink straddles the divide between smoothie and mocktail cooler. It is made with crushed/blended fruit, juices, and soda. It is very fruity, and I particularly like it.

Ingredients:

  • Strawberries 4 large (frozen)
  • Blueberries 4 (frozen)
  • Cherries 2 (pip removed)
  • Blueberry Juice 200-220 ml
  • Cherry Cordial 1 Tbs
  • Ice (crushed)
  • Fizzy Lemonade (Sprite) To top off

Method:

Place the frozen fruit and cherries into a blender and add enough juice to cover them.  Blitz until smooth. Add remaining juice and cordial and stir. Fill a glass 1/4 to 1/3 full with crushed ice, and pour the juice mixture over it. Wait to settle, and gently top glass off with lemonade.

Strawberry Ginger Splash (Mocktail/Cooler)

Here is another warm weather cooling mocktail with a pleasant colour and sweet taste, but without too many calories.  It is an easy recipe with only a few ingredients, and can be made in just a couple of minutes. It can be made with fresh berries, but frozen ones give it more of a cooling effect.  It can be garnished in any way to add to presentation (Paper umbrellas?  Why not?)

Ingredients:

  • Ginger Ale 300 ml
  • Strawberries 5 or 6
  • Ice 1 cup

Method:

Place the strawberries into a blender and add 100 ml of ginger ale.  Blitz until fruit is evenly blended (and if using frozen fruit that no chunks remain).  Pour fruit mixture into a large glass and add ice until glass is 1/2 to 2/3 full. Top off with ginger ale, and place a strawberry (or other garnish) on top. The ice should suspend the topping.
